Pyrenees. Pallars Jussà
Hand harvested and using small boxes of 10 kg. The grapes come exclusively from our single estate vineyard. The wine was fermented in small 25hl stainless steel tanks. Fermentation was stopped when the wine had enough residual sugar to ensure 2nd fermentation in the bottle without adding any external sugar. Therefore the sugar necessary to produce CO2 comes from the grapes.
Aged in bottle for 60 months.
Semillon, Sauvignon Blanc.

4.200 bottles of 75cl.
Light green olive.
Mineral notes, white fruit (peach) and some lactic aromas coming from aging in the bottle.
Fine and elegant bubbles filling the mouth without being agressive. Complex, saline and with a very well balanced acidity.
Long and complex.
While in the bottle this wine will further develop the complexity typical for cold climate sparkling wines.
